Ah, Easter morning. Where you get up early because the Easter Bunny left a basket of eggs and chocolate around the house, and you have to find it before the dog does.
Then before you can have any of those chocolate eggs and candies, you have to go to church.
After all that … you can come home and snack on one or two pieces (before your parents take the best candies as part of that “candy tax” that supposedly still exists from Halloween).
But if you live by yourself … and you have no one in your life to share these stories with …
You do something involving Easter and eggs in your own special way.
Let’s get the ingredients out.
- Eggs, two
- Butter, 2 tsp
- Shredded cheese, to taste
- Kosher salt (every meal needs Kosher salt)
- Black pepper
Crack two eggs in a bowl and beat them until blended.
Melt butter on a skillet to low-medium heat.
Pour the eggs into the skillet and immediately work them into curds with a spatula.
After about 45 seconds, drop in a couple of pinches of shredded cheese into the eggs and keep mixing and folding them.
When almost done, add some black pepper on top. Put the Kosher salt away.
Serves one.

This takes about five minutes of prep and about three minutes to complete. And you can add or subtract as much cheese as suits your taste. I used Mexican four blend cheese in this, but you can use any other cheese that appeals to you.
And you don’t have to paint the shells or anything like that. See? This tastes good.
A perfect breakfast for one.
